This cookbook is lovingly dedicated to Dr. Richard K. Bernstein, a true pioneer, warrior, and healer in the world of diabetes management.


Diagnosed with Type 1 diabetes at the age of 12, Dr. Bernstein defied the odds and forever transformed the way we understand and treat diabetes. At a time when conventional medicine accepted high-carb diets and unpredictable blood sugars as the norm, he dared to challenge that thinking — proving that a low-carbohydrate lifestyle could offer stability, safety, and a higher quality of life for people living with diabetes.


Through his tireless work, Dr. Bernstein empowered thousands around the world — including myself — with the tools, knowledge, and confidence to take control of their health. His impact lives on through his landmark book "Diabetes Solution", the Diabetes University video series on YouTube, and the TypeOneGrit Facebook group — a supportive community he helped inspire.


Special thanks also to RD Dikeman, who played a crucial role in bringing Dr. Bernstein’s message to the digital world. As a co-founder of the TypeOneGrit group and the visionary behind Diabetes University, RD helped ensure that Dr. Bernstein’s teachings reached and uplifted a global audience. His work, fueled by love for his son and a passion for truth in diabetes care, created a home for thousands seeking better answers.


Dr. Bernstein passed away in April 2025, at the age of 90 — a testament to the power of discipline, courage, and not settling for less than optimal health.


There is no doubt that those who follow Dr. Bernstein’s low-carb approach are not only achieving more stable blood sugars, but are actively protecting themselves from the long-term complications of both hyperglycemia and hypoglycemia. His method reduces the risk of dangerous highs and life-threatening lows — offering a safer, saner path for people with diabetes.


This book is a tribute to the freedom, hope, and healing he gave so many of us — one low-carb bite at a time.
