Welcome to Simple Keto Kosher! I’m Eli—a mom, home cook, and proud Jewish woman on a mission to make low-carb, keto-friendly meals accessible to families who keep kosher.My journey began in 2014, when my 6.5-year-old son, Ezra, was diagnosed with Type 1 Diabetes. Overnight, food became more than just nourishment—it became a form of medicine, a challenge, and ultimately, a source of creativity and connection. In those first overwhelming days, I was given a book by the guru himself, Dr. Richard Bernstein. Although I was hesitant, I figured it was worth a try—and that decision changed everything.Ezra, only a child at the time, was incredibly brave—taking on a whole new way of eating with courage and curiosity. His endocrinologists were hesitant too; they didn’t expect him to stick with keto through his teenage years. But here we are—over 12 years later—Ezra is 18, thriving, and still fully committed to this way of life. Those same doctors are now amazed by his discipline and long-term success. What was once met with skepticism is now seen as remarkable.Determined to manage Ezra’s health while still giving him the comfort and joy of the foods he loved, I dove deep into low-carb cooking. Along the way, I discovered how hard it was to find kosher, low-carb recipes that actually worked—especially ones kids would enjoy. So I rolled up my sleeves and started adapting, testing, and creating my own.This cookbook is the result of over a decade of experience, countless experiments, and a whole lot of love.Simple Keto Kosher isn’t just about food—it’s about family, tradition, and well-being. Whether you’re managing diabetes, cutting sugar, or simply trying to eat healthier while keeping kosher, this is for you.
